murphy orchards: elderberry jam

Murphy Orchard's Elderberry Jam, made (in their own words) from teeny-tiny elderberries. I actually started to order a half-pint, but stopped when I discovered it was almost $9 to ship to Texas. I really need to find me a farmers market.

I make elderberry ketchup which is excellent on pork or chicken. cover the berries in vinegar bring to a boil until they burst then run through a foley strainer I add cinnamon, cloves , nutmeg and a little cayenne a little sugar to it, cook until thick and Pour in sterile bottles enjoy. if you are going to can elderberrie with apples you may not need pectin the apple will do that for you.
