Nice site on wine recipes. I’ll be inspired and come back to it in the fall when the berries are ripe in my neck of the woods. I have only one elderberry on my land at 2500 ft in the sierra foothills of California. But up a little higher where I collected a few years ago for cordial there are many loaded trees when in season. The band tailed pigeons seem to know where to go for a good gorge. thanks for your site, I will return for details later.

I’m wondering which elder is most suited to elderflower cordial? I understand that certain varieties have an unsuitable “catty” aroma and I’d like to plant the proper one for culinary use.
